How do I tell if food has actually gone bad?

That date on the package is less official than you think.

1

What's probably happening

Dates like 'best by' and 'sell by' are mostly about peak quality, set by the manufacturer, not a federal safety cutoff. Food can be safe past that date, or unsafe before it, depending on how it was stored.

2

How urgent is it

This matters most for perishables: dairy, meat, eggs, and leftovers. Shelf-stable stuff like canned goods and dry pasta is far more forgiving.

3

What to do first

Use your senses first: smell, texture, and appearance catch most spoiled food before a date on a label does.

4

Can I handle this myself

Cooked leftovers are generally fine for 3 to 4 days in the fridge. Raw meat and poultry should be used or frozen within a couple of days of purchase. If something smells off, looks slimy, or has visible mold on a food that isn't supposed to have it, toss it, don't taste-test to find out.

5

When to call a professional

If you've eaten something questionable and start feeling sick, that's a call to a doctor or poison control, not a judgment call to make alone.

6

What it might cost

Free, this is about using your judgment, not buying anything.

7

What to gather first

None needed, just the item in front of you.

8

Mistakes to avoid

Treating 'best by' as a hard safety deadline, or ignoring obvious mold and smell because the date hasn't passed yet.
